- 1 lb / 500g white fish fillets , skinless and pin boned, cut into chunks - Basa etc
- 3 tbsp red curry paste (or much less for Rabbit)
- coriander
- fish sauce
- lime juice
- 1 egg
Wizz that lot until they get sticky. Then add
- cornstarch
- 6 green beans , finely sliced
Then fry in scoops. Hot deep fry worked best, they poufed up.
- Oil for frying (lots)
Dipping Sauce
- ·
60g (1/4 cup) sugar substitute
- ·
60ml (1/4 cup) fresh lime juice
- ·
1 tbsp fish sauce, extra
- ·
1/2 Lebanese cucumber, deseeded, finely chopped
- ·
1 small fresh red birdseye chilli, deseeded,
thinly sliced
