I tried this (more or less) but skipped the part where you hand-craft your own foil muffin tins, because... well. Anyway the cauliflower stuck hopelessly to the muffin tin, and also it kind of imploded into a homogenous mess, but it was still tasty. The basic principle is OK, I'll post again when I've sorted it out.
Method:
Blitz cauliflower, add egg, oat flour, seasoning, leave to sit, then fashion into a 'pastry' shell (in your hand-made foil moulds), bake until firm.
Create a bacon-onion-mushroom-egg-cheese-roux mix for a filling, pop into your shells, and bake again.
