These are cooked in the usual Gordon Ramsay way in the oven for three hours under foil, but this time after browning the ribs and removing from the pan initially, the wine got reduced a bit on the stovetop before putting the ribs in, covering, and ovening. Also for the gravy, added a bit of balsamic vinager, which gave a nice kick against the fat.
The pumpkin and carrot puree and beans are exactly as you'd expect. Delicious.
