Well that's what Bunny said. It was OK. Points of difference were:
For the mince mix, fry diced onions, add kangaroo mince, brown, add red wine, and then start adding things like:
dried oregano and parsley, vegimite, vegeta, balsamic vinager, a spoon of sugar, liquid smoke, more red wine, salt to taste after all that, pepper...I think that's about it. Cook a fair bit, that roo needs some time.
For the layers, butternut squash in flat thinnish slabs (3mm-ish), peeled aubergine in similar slabs, both microwaved with a splash of water, covered and salted until they won't bother anyone, and drain.
For the sauce, regular white sauce with plenty of nutmeg, and layer it with cheddar (easier than melting the cheddar in the sauce). I also had some mozarella balls which I scattered but I'm sure this wasn't necessary.
