Thai fish cakes


  • 1 lb / 500g white fish fillets , skinless and pin boned, cut into chunks - Basa etc
  • 3 tbsp red curry paste (or much less for Rabbit)
  • coriander
  • fish sauce
  • lime juice
  • 1 egg

Wizz that lot until they get sticky. Then add
  •  cornstarch 
  • 6 green beans , finely sliced 
Then fry in scoops. Hot deep fry worked best, they poufed up. 
  • Oil for frying (lots) 

Dipping Sauce 

  • ·        60g (1/4 cup) sugar substitute
  • ·        60ml (1/4 cup) fresh lime juice
  • ·        1 tbsp fish sauce, extra
  • ·        1/2 Lebanese cucumber, deseeded, finely chopped
  • ·        1 small fresh red birdseye chilli, deseeded, thinly sliced
