Kangaroo Lasagne That Tastes Like Pepperoni Pizza

 Well that's what Bunny said. It was OK. Points of difference were: 

For the mince mix, fry diced onions, add kangaroo mince, brown, add red wine, and then start adding things like: 

dried oregano and parsley, vegimite, vegeta, balsamic vinager, a spoon of sugar, liquid smoke, more red wine, salt to taste after all that, pepper...I think that's about it. Cook a fair bit, that roo needs some time. 

For the layers, butternut squash in flat thinnish slabs (3mm-ish), peeled aubergine in similar slabs, both microwaved with a splash of water, covered and salted until they won't bother anyone, and drain. 

For the sauce, regular white sauce with plenty of nutmeg, and layer it with cheddar (easier than melting the cheddar in the sauce). I also had some mozarella balls which I scattered but I'm sure this wasn't necessary. 

Pretty damn tasty. No pics, looked good. 

Beef Ribs in Red Wine, in Carrot and Pumkin Puree

 


These are cooked in the usual Gordon Ramsay way in the oven for three hours under foil, but this time after browning the ribs and removing from the pan initially, the wine got reduced a bit on the stovetop before putting the ribs in, covering, and ovening. Also for the gravy, added a bit of balsamic vinager, which gave a nice kick against the fat. 


The pumpkin and carrot puree and beans are exactly as you'd expect. Delicious. 

Stuffed Peppers Bunny-Style

 



Mince, add fried onions and carrots, mix, add cream and blue cheese (melted into it) and a bit of cheddar, as well as a bit of panko. Top off with a mozarella ball, cook about 40 odd minutes on about 180. This was different from the usual in tomato sauce because it concentrated the pepper flavour. Also really meaty because there's no rice. Jolly tasty.

Cauliflower muffins... sort of

I tried this (more or less) but skipped the part where you hand-craft your own foil muffin tins, because... well. Anyway the cauliflower stuck hopelessly to the muffin tin, and also it kind of imploded into a homogenous mess, but it was still tasty. The basic principle is OK, I'll post again when I've sorted it out. 

Method:

Blitz cauliflower, add egg, oat flour, seasoning, leave to sit, then fashion into a 'pastry' shell (in your hand-made foil moulds), bake until firm.

Create a bacon-onion-mushroom-egg-cheese-roux mix for a filling, pop into your shells, and bake again.

Bunny's Awesome Pumpkin Lasagne

 We have found that low-carb 'lasagne' is particularly good with slices of pumpkin (or butternut squash) substituted for the pasta. Also, gorgonzola (just a bit) really gives the mince a great flavour. I believe Bunny does his without white sauce, but with a good bit of cheddar and possibly parmezan as well. So it's just the mince sauce, the cheeses, and the pre-microwave-steamed slices of butternut. Extremely good. Not quite keto but pretty low-carb. 

Vaguely Middle Easter Chicken and Salad

This is the one I nearly blew the house up with my turning the BBQ gas cylinder the wrong way. Anyway, started it on the BBQ but it was frankly a pain, plus the gar ran out so finished in the oven under the grill. Tasty, and easier. Meat and salad combo. 


For the chicken: 

Bone the whole chicken ahead of time and soak for a few hours in velveting mix (a couple of spoons of salt and bicarb in soaking water, in a tub in the fridge). 

Rinse, pat dry, and apply Moroccan rub (or Baharat or whatever you're using) and in this instance a quarter of a preserved lemon, finely diced, applied to the innder side. 

Flatten it out with a BBQ-mesh thing so you can flip it - or just lay out on a rack. Grill. Flip. etc. 


For the salad: 

Baby spinach, grilled pumpkin, grilled courgette, chopped mint, pepitas. 

For the dressing: 

Point of difference - Spoon (or to taste) almond butter, good amount of lemon juice to loosen it up, salt and pepper, couple of spoons of Greek yoghurt. This was a pretty zingy sauce that went well with the chicken. Apply liberally. 

Cut up the chicken prior to serving.

Bunny's elusive almond hamburger rolls

 We don't have a recipe for this, it's a placeholder to try and find it. A really simple thing where you have egg, almond meal, and some baking powder and put it in a ramekin in the microwave and less than a minute later you have a slightly crunchy, but weirdly morish low-carb 'hamburger' bun. I tried it and it turned into more of a wet omelette - guessing I didn't put enough almond in. Even the wet omelette was sort of useable for a mini-pizza. 

Lara's spicy one-pot Couscous

Ingredients

  •  2 tsp olive oil 
  • 2 red onions, thinly sliced 
  • 4 chorizo, sliced 
  • 1.5 tsp dried chili flakes (or rather less) 
  • 2 tsp rosemary leaves, chopped 
  • 2 cups instant couscous 
  • 2.75 cups chicken stock 
  • 150g baby spinach leaves 
  • 0.5 c continental parsley, chopped 
  • Lemon wedges 
  • garlic aioli 

Method

  • Heat the oil to mediu to high heat
  • Add onion, chorizo, chili and rosemary. Cook for 7-9 mins until onions are golden. 
  • Add couscous and chicken stock to pan. 
  • Reduce to low, simmer for 7 mins, or until stock absorbed.
  • Stir through spinach and parlsey 
  • Serve immediately with lemon wedges and aioli. 

Problem lamb kebabs with coronation slaw

 These are a problem because the kebabs got dry. I don't really want to add more fat, I'd rather work to keep the fat that's there in the kebab and not washing away. Anyway the taste was good so I'll work on it. 


Kebabs: Half onion, allspice, parsley/and or rosemary, baharat, japaneno, 'pine nuts' (used walnuts instead). 

Original recipe didn't cook the onions but I don't think that's wise. So I did. The whole Baharat thing was nice. Skewers were mean to be flat, mine weren't, it was fine as far as slipping off goes. I think on the next trial I'm simply going to reduce cooking time to max 3 mins per side, grilled.


Baharat: Corriander seeds, cumin seeds, whole cloves, black peppercorns, cardamom pods seeds only (toast them and whiz), plus unsmoked paprika and grated nutmeg. 


Topping for kebabs: 

Masscerate thinly sliced red onion in lemon for a few hours prior. Add in sumac and chopped parsley at the end. Was pretty effective. 


A side slaw with: 

Yoghur, lemon, curry powder (in this case cabbage, red oinion, carrot, sultana equivalent... or walnut) 

Effectively 'coronation' slaw. Kinda ok.


These were actually pretty tasty inside a wrap, if you can stomach the carbs.

Dancakes (Oatcakes)

 They're 'Dancakes' because it's a riff on something Dan Churchill from Centr made. Also, the oat flour is ridiculously expensive in the shops but it's perfectly fine to blend some normal oats and hey presto it's cheap again. I like these things with lots of lemon juice and some Greek yoghurt on top. 


Dancake mix recipe

Mix

3 cups oat flour

1 cup plain flour

¼ cup sugar

3tsp cinnamon, cloves, allspice mixed

2 tsp baking powder

1 tsp salt

 

To cook, per portion:

1/3 cup mix

1 egg

1 tbsp Greek Yoghurt

Keto Lemon Bars

 Like normal lemon bars only much chewier. Can't say they're the best but needs must. 


Crust with: 

  • 80g butter
  • 130 g almod flour 
  • 40g sweetner 
  • tsp lemon zest 

Combine and bake as usual. 

Filling: 

  • 60g butter 
  • 50g sweetner 
  • 80ml lemon juice w lemon zest 
  • 3 eggs 
  • some gelatine and some cornstarch to thicken 

Cook the curd as normal. They put in the starch and gelatine later. I guess that'll keep it to a minimum. They also cook the curd together with the butter, instead of adding it later. Not sure why. 

Pour onto semi-cooked almosd base. REturn to heat. 180 for 15 mins, or as needed. 

Lara’s Chocolate Nut Cake

 (Lara is a chocolate nut)

 

  • 3 eggs separated, medium size, at room temperature
  • 110 g butter
  • 150 g sugar
  • 1/2 tablespoon milk at room temperature
  • 50g ish of chopped nuts
  • 1 big tablespoon cocoa powder
  • 90 g flour (plain)
  • 1 teaspoon baking powder

 

Preheat your oven to 180°C.

Melt a bit of butter and use pastry brush to rapidly coat the inside of a Bundt tin.

Separate the eggs.

Chop the nuts.

Measure out, combine, and sift together the cocoa, flour, and baking powder. Don’t get it everywhere.

Mostly melt the butter in the microwave (cover with a plate please)

Whip the whites to stiff peaks.

Put butter, egg yolks, sugar, and a good splash of milk in a medium bowl and whisk mightily until floofy.

Combine the flour mix and the nuts into the floofy egg and butter mix. Stirring, folding not beating. If it ends up being super-stiff and solid so you won’t be able to fold in the egg whites, mix in a bit more milk as needed.

Surfer-fold the egg whites gradually into the chocolaty mix. Put in a bit first to get the mix looser, then the rest.

Tip the mix in the Bundt tin carefully so it doesn’t splatter all over the sides… but quickly. If spattered, wipe excess away with a paper towel so it doesn’t burn.

Cook for about 15 minutes and check. Cook more as needed. 

Leave to cool completely. Before turning out, loosen the sides carefully with a spatula (just a bit) and tap the bottom also to loosen it. Hopefully you’ll feel it move before turning it out. 

Hazelnut Bread Things with (or without) custard

 It's a sweet bread dough with hazelnut mix in the middle.

250g flour
7g yeast
25g sugar (I put in much more)
vanilla essence
lemon essense
1 egg
40 butter
125mk milk

Make the dough with the above and when it's all risen and ready form into balls with the following mix inside:
80ml milk
2tbsp honey
160g ground hazelnuts

(actually I just used sugar, it was fine)
Rise again, bake. When done brish over with melted butter and sugar for a nice crunchy finish. Meant to be serves with custard (vanilla sauce) but I found them fine as they were.

Cauliflower Tabbouleh

 Extremely tasty carb alternative.


Blitz up head of cauliflower and microwave for 4 minutes. Add in finely chopped large bunch each of mint and parsley, and some chopped red onions / shallots, microwave for another 1 min. Season massively. Add chopped nuts of choice. Even the kids say it's a 'do again'.

Mega Porkballs Thai style

  Shrimp paste, spring onions, an egg, some green curry powder, seasoning and yes, a bit of panko to hold together your pork mince meatballs. We were done with stuffing around with small ones so we did half the size of a fist and they turned out really nicely. 

Chop veg (whatever you're putting in)

Prep coconut milk mix with more shrimp paste, green curry paste, lime juice

Prep cornstarch thickener

Get yer wok out. Meatballs, veg, sauce, thicken. Some had it with noodles. It was great. Will try to take pics next time

Liverwurst and linseed meal biscuit

 Less than half a red onion, seasoning, an egg, allspice, and some booze (whisky, brandy, etc). Blends really finely. Add a tidied pack of about 600g livers, blend really finely. Bain Marie it covered for about 2 hours, possibly uncovered at the end, make sure it comes away from the edges a bit by the end. Cool, turf out or keep in the pot, depending on your receptacle. 


To serve, I tried some Linseed meal biscuits, which weren't bad. 


Tried raising it with egg, melted butter, seasoning and yeast, but it didn't rise at all. It did however seem to soften the linseed. Left it for about an hour and then dealt with the pasty mess. Lined a brownie tray with baking powder, cooked at about 170, took about 15 mins. Took out and scored shortbread-finger-type slices. Left in at the end to make it dry out a little without browning, not sure if it did anything, but the texture was OK considering. Actually better than standard bread with the liverwurst (I tried both).

Satay sauce

 Satay sauce

Peanut butter, lime, chili, soy and fish sauce, (tamarind), sweetener, coriander, coconut milk (sesame oil) 


Left the chicken overnight in this with some cornflour. Then had some more afterwards... without the cornflour, more lime, for dipping. 

Thai fish cakes


  • 1 lb / 500g white fish fillets , skinless and pin boned, cut into chunks - Basa etc
  • 3 tbsp red curry paste (or much less for Rabbit)
  • coriander
  • fish sauce
  • lime juice
  • 1 egg

Wizz that lot until they get sticky. Then add
  •  cornstarch 
  • 6 green beans , finely sliced 
Then fry in scoops. Hot deep fry worked best, they poufed up. 
  • Oil for frying (lots) 

Dipping Sauce 

  • ·        60g (1/4 cup) sugar substitute
  • ·        60ml (1/4 cup) fresh lime juice
  • ·        1 tbsp fish sauce, extra
  • ·        1/2 Lebanese cucumber, deseeded, finely chopped
  • ·        1 small fresh red birdseye chilli, deseeded, thinly sliced

Keto Chocolate Mousse

  As a Moose, I approve. 



(Bunny complained that the regular martini glasses weren't big enough. It's not a perspective trick.) 

  • 1 cup heavy whipping cream 
  • 1/4 cup unsweetened cocoa powder 
  • 1/4 cup sweetner 
  • vanilla extract 
  • pinch of salt 

Sift the dry ingredients together and whip into a ... MOOSE... with the cream. Or whip the cream a bit and add the rest. Serve with generous amounts of Kahlua. Yet to find someone who doesn't like this. Takes about three minutes to make.
